Sodium bicarbonate was discovered officially in 1791 by a French chemist named Nicolas Leblanc. However, the Egyptians used a similar substance as a soap. In New York in 1846, two New York bakers (John Dwight and Austin Church) established the first factory to manufacture baking soda. This substance was used in one of Rudyard Kipling's books, Captains Courageous, it said that in the 1800's this substance was used to keep fish from spoiling.
